Slow cooked sausage and onion casserole for kids

A super simple and delicious family meal that uses a slow cooker after a quick fry in a pan ... delicious!

Slow cooked sausage and onion casserole for kids

  • 1 tbsp olive oil

  • 8 sausages

  • 3 onions (in half then in thick, half moon slices), sliced

  • 2 tbsp plain flour

  • 500ml beef stock (or chicken)

  • 3 tbsp chutney (or pickle - any type)

  • 1 tbsp Worcestershire sauce

  1. Set the slow cooker to HIGH

  2. Meanwhile, heat the oil in a frying pan, add the sausages and quickly brown on all sides, then transfer to the slow cooker

  3. Add the onions to the frying pan and cook, stirring occasionally, until soft but not brown - stir in the flour and cook gently for 1-2 minutes

  4. Make sure you scrape all the flour from the bottom of the pan

  5. Remove from the heat and gradually stir in the stock - bring to the boil, stirring continuously, until thickened

  6. Stir in the chutney and Worcestershire sauce

  7. Transfer to the slow cooker

  8. Turn the slow cooker down to LOW, put the lid on and cook on LOW for 5-8 hours

  9. Serve with vegetables and mash

Older kids can help you weigh and measure the ingredients, and even shop the onion.

This sausage casserole recipe is for a slow cooker. Serve with vegetables and a dollop of creamy mash on a cold autumn evening.

Variations

Adding some raw chopped vegetables under the sausages in slow cooker (peppers or root vegetables work particularly well)

If you don't have a slow cooker, cook in a casserole dish with lid, in the oven at 180°C/Gas mark 4 for 1-1.5 hours

You can also make this casserole on the hob - just cook the sausages and veg for a bit longer before adding the other ingredients, then simmer on a low heat for about half an hour.

    Made it today! Did not have Worcestershire sauce and chutney, but added 3 cloves of garlic instead! Only used 1 big onion and 6 sausages. It is a great recipe, so easy and smells great! My toddler is loving it and I will enjoy for supper later! We served with mashed potatoe and carrots. For my toddler - mashed potatoe with carrot ( she is bit funny about eating carrots but does not mind when mashed eith potato)
