Bakewell tart traybake

This recipe combines the classic flavours of almonds and raspberry jam for a trendy spin on a traditional Bakewell tart, with rectangular slices perfect for sharing

Makes a 20cm x 30cm traybake, cut into 15 bars

  • 150g plain flour

  • 150g caster sugar (split into 50g and 100g)

  • 200g unsalted butter (softened, split into 2 x 100g)

  • 150g ground almonds

  • 1 egg

  • 200g raspberry jam

  • 1 handful of flaked almonds

  • A sprinkle of icing sugar (for dusting)

  1. Preheat the oven to 165°C (fan). Line a traybake tin with baking paper.

  2. Put the plain flour and 50g of caster sugar in a mixing bowl before rubbing in 100g of unsalted butter with your fingertips.

  3. When the mixture resembles crumbs, pour it into the traybake tin, spread it evenly and press it down so the crumbs loosely join together. Bake the base for 15 minutes.

  4. While the base is baking, it's time to make the frangipane topping. Combine the remaining 100g butter, 100g caster sugar, ground almonds and the egg in the mixing bowl and stir well.

  5. When the base has been in the oven for 15 minutes, take it out and add the raspberry jam, spreading it over the base with the back of a spoon to create an even layer.

  6. Then top the layer of raspberry jam with a thick covering of the frangipane mix and a sprinkling of flaked almonds.

  7. Return the traybake to the oven and bake for a further 30 minutes.

  8. When the traybake is golden on top, remove it from the oven and allow to cool completely before carefully sliding it out the tin.

  9. Dust the traybake with icing sugar, slice into bars and top with flaked almonds to serve.
