Baby banana pancakes

  • 1 ripe banana

  • 1 large egg

  • Coconut or vegetable oil

  1. Use a fork to mash the banana in a bowl until you get a smooth pulp

  2. Whisk the egg into the mixture to make the batter

  3. Heat a little vegetable or coconut oil (roughly a teaspoon) in the frying pan on a medium heat

  4. Spoon a little of the banana mixture (about two tablespoons) into the frying pan, and use the back of a spoon to flatten it into a rounded mini pancake shape

  5. Fry for 2-3 minutes until the bottom has solidified without sticking to the pan, or burning. Use a spatula to flip the pancake and cook the other side.

  6. Make sure the pancake is golden on both sides and cooked the whole way through, then remove from the heat. Repeat for the rest of the mixture.

  7. Don't serve the pancakes to your baby straight away. Wait for them to cool slightly, but serve them warm.

Tips

These baby banana pancakes are perfect for introducing Pancake Day to your baby with a recipe that's a little less heavy on their tummies.

The mashed banana gives these pancakes a light and fluffy texture that is easy for your infant to chew, and the batter's consistency means you can mould it easily into smaller baby-sized portions.

If you're not sure how much your baby will eat, or if they'll like the taste, try frying up half the mixture and storing the rest in the fridge for the next day.

Variations

If you've already introduced your baby to bananas and egg, these baby banana pancakes might be a good opportunity to try throwing in a few new flavours to help your baby wean onto solid foods. Try mixing a dash of cinnamon or nutmeg into your batter before frying.
