Braised beef with sweet potato - Annabel Karmel

  • 20g butter (or margarine)

  • 1 leek (approximately 150g), sliced

  • 125g braising steak, cubed

  • 1 tbsp flour

  • 100g button mushrooms, sliced

  • 275g sweet potato (peeled and chopped)

  • 250ml chicken stock (homemade or low salt versions suitable for babies)

  • 1 orange (approximately 120ml), juiced

  1. Preheat oven to 180'C/350'F/Gas mark 4

  2. Melt the butter or margarine in a flameproof casserole dish

  3. Sauté the leek for about 4 minutes until softened

  4. Roll the meat in the flour, add to the leek and sauté until browned

  5. Add the mushrooms and sauté for 1 minute

  6. Add the sweet potato, stock and orange juice

  7. Bring to the boil and transfer to oven for 1 hour 15 minutes, or until the meat is tender

  8. Leave to cool

  9. Once cooled, blend to the desired consistency using as much of the cooking liquid as necessary

Makes 6 child size portions!

Variations

Try with carrot or butternut squash, instead of sweet potato

    I used to make this for my son when he was little (very similar if not exactly the same) - I used to make a big batch, use some for my dinner (before blitzing!) then blitz half and feed him, then freeze the rest to make weekdays easier ! (working mum)
