Basic cheese and tomato pizza

All kids love pizza - our homemade version is cheaper and healthier than most shop bought ones...

For the dough

  • 225g strong white flour (plus extra for dusting)

  • ¼ tsp salt

  • ½ tsp easy-blend yeast

  • 150ml warm water

  • 1 tbsp light olive oil

For the topping

  • tomato sauce (recipe link in tips)

  • 100g soft mozzarella cheese (ball type)

  • 2 medium tomatoes (thinly), sliced

  • 2 tbsp Parmesan (or mature cheddar cheese), grated

For the dough

  1. Sift the flour and salt into a large mixing bowl and stir in the yeast

  2. Make a well in the centre and pour in half the water and the oil

  3. Mix with a fork, adding more of the water as necessary, until you have a soft dough

  4. Turn the dough out on to a floured, dry, clean kitchen surface and knead for about 10 minutes until the dough looks and feels smooth and elastic

  5. Put in a well oiled bowl, cover and leave for an hour by which time it should have doubled in size

  6. Meanwhile, make the tomato sauce (see link in tips) and set aside to cool

  7. Preheat oven 220'C/425'F/Gas mark 7

  8. When the dough is ready, put it back on the work surface and roll it out to around 30cm in diameter

  9. Spread the tomato sauce over it, leaving 2cm round the edges

For the topping

  1. Arrange the sliced mozzeralla on top followed by the tomato slices and grated parmesan

  2. Now is the time to add any other toppings you like, followed by a last sprinkling of grated cheese

  3. Cook in a preheated oven for 20 minutes or until the topping is bubbling and golden and the edges of the base are nicely brown

Tips

A basic cheese and tomato pizza that you can pimp to your own tastes.

Uncooked bases and cooked tomato sauce can be frozen seperately or as a finished pizza. Bag the bases seperately to freeze so they don't stick together.

High in calcium and good amounts of vitamin C, carotene and a wide range of other vitamins and minerals.

Recipe makes 1x 30cm pizza, which serves up to 4 children.

Variations

Serve with a mixed leaf salad, or for extra hungry children you could add potato wedges to go with it.

Extra toppings could include: skinned sliced chicken breast and sliced button mushrooms, diced chorizo, salami, pepperoni, Parma ham and thinly sliced red onion, tuna and cherry tomatoes, sweetcorn, pineapple and diced ham, roasted or stir-fried mixed Meditereanean vegetables (e.g. courgette, aubergine, red onion, tomato, peppers), cherry tomatoes and baby spinach leaves

To make it even tastier, add a sprinkling of dried oregano or basil before cooking.

In a hurry? Use ready-made pizza dough, or even a tortilla, pitta bread or sliced baguette for a pizza-style treat.
