  • 1 leek (chopped roughly)

  • 2 courgettes (chopped into chunks)

  • 1 red pepper (or yellow pepper, coarsely chopped)

  • 8 mushrooms, chopped

  • 1 aubergine (small, chopped into chunks)

  • garlic (1x clove), crushed

  • 800g tomatoes (2x tins), chopped

  • oregano (a pinch), dried

  • pepper (to taste)

  • sugar (optional)

  • 1 tbsp olive oil (or butter)

  1. In a little olive oil or butter, add all the vegetables and garlic and soften gently for about 10 minutes

  2. Add the tins of tomatoes and sprinkle on the herbs, pepper and sugar

  3. Stir to combine, then cover and simmer for about 30-45 minutes

  4. Once all the vegetables are completely soft, transfer the mixture to a blender – or use a handheld blender – and blitz it until moderately smooth

  5. Spoon into ice cube trays or small pots and freeze

  6. The recipe makes a large volume of sauce – but you’ll get through it as it’s very versatile

    I try not to use hidden veg too much, as I want DD to get a taste for actual veg - but sometimes when I'm really fretting about her veg intake, I'll resort to this 'cause I know she'll eat it. Great with pasta, meatballs, on homemade pizza, stirred into mince, etc...
