Frittata

  • 4 potatoes

  • 4 eggs

  • 1 tbsp milk

  • 1 onion

  • garlic (2x cloves)

  • cheese, grated

  • ham (optional)

  • mushrooms (optional)

  • spinach (optional)

  1. Boil potatoes, cool and slice

  2. Fry onions and garlic until soft

  3. Add potatoes and any other filling (mushrooms, ham, spinach etc) to frying pan and heat through

  4. Beat egg and milk together and add to mixture

  5. Cook until set around the edges but still soft in the middle

  6. Sprinkle cheese on top and place under a hot grill

  7. Cook until browned on top

  8. Serve hot with baked beans, peas, jacket potato, wedges or similar or leave to cool and eat cold in packed lunches

Variations

You can use any assorted fillings: ham, peppers, peas, mushrooms, broccoli, tomatoes, courgettes or whatever you have in the fridge!
