Potato wedges for kids

A great healthy alternative to chips...

  • 550g potatoes, washed

  • 2 tbsp olive oil

  • salt (to season)

  • pepper (to season)

  1. Preheat the oven to 190'C/Gas mark 5

  2. Cut the potatoes lengthways into wedges - leave the skin on

  3. Dry them with kitchen paper or a tea towel and put in a large bowl

  4. Dribble the olive oil over them and combine thoroughly with your hands

  5. Now arrange in a single layer on a baking tray and cook for about 40 minutes until crisp and golden

Tips

Cut down the baking time - parboil the wedges for 5 minutes first, then dry before coating with the oil as above - cooking time can be reduced to about 25 minutes

Variations

Older children may enjoy the wedges coated (before baking) in cajun, BBQ or garlic seasoning. Be aware that most dried seasonings are quite high in salt.
