Easy vegetable pasta

  • 300g pasta (shells work well), dried

  • 1 large head of broccoli

  • 4 cloves of garlic, sliced

  • 1/4 tsp chilli flakes (optional)

  • 100g cream cheese

  • 6 tbsp olive oil

  • black pepper

  1. Put a large pan of water on to boil

  2. Remove the broccoli from the head - you need to make sure the florets are quite small

  3. Peel and slice the garlic as thinly as possible

  4. Add the pasta to the boiling water and, for the last 5 mins of cooking, add the chopped broccoli florets (or steam it above the pasta if you have a steamer)

  5. Once it's all cooked leave to drain

  6. Heat the oil in the saucepan and add the garlic and chilli (optional) - make sure it doesn't burn

  7. Add the cream cheese, garlic and chilli to the pasta and stir until all the pasta is covered - bash the broccoli so it breaks up as much as possible

  8. Add a grind of black pepper and some basil if you have any

  9. Serve

Use frozen veg, a bag of 'special mixed vegetables' make the pasta very colourful

    This is so simple to create and any veggies you have to hand could be used . I like my pasta with courgettes and peas.
