Cauliflower rice

  • 1 large cauliflower

  • 2 tbsp water (to steam the cauliflower rice)

  • 1 tbsp olive oil (to fry the cauliflower rice)

  1. Start by removing all the leaves from the cauliflower, then break it down into small florets

  2. Give the florets a quick rinse, then the cauliflower is ready for action

  3. You now have two choices; you can either blitz the cauliflower in the food processor or grate the cauliflower - the latter is obviously more time consuming

  4. You should now have a whole heap of raw cauliflower which resembles rice, so it's time to get cooking

  5. Again, you have two different options when it comes to cooking cauliflower rice; you can fry it in a hot pan with a little oil, or you could steam it in a saucepan with a couple of tablespoons of water (the same way you make couscous)

Tips

You don't have to cook it, you can eat it raw if you like, but it doesn't taste as good

Variations

Jazz it up a bit with some herbs and spices.

A squeeze of lime and some chilli flakes also work well.

    Cauli rice is awesome! really does work, I like it dry fried in pan. Its brilliant for diabetics who want low carb alternatives. Cauli mash makes a wonderful substitute for mashed potato for low-carb diabetics too.

    This is a fantastic alternative to rice. My LO loves it and i know it's so healthy for her. We also use it with our curries now as it cuts the calories way down and means we don't feel so gulity having the odd nann bread with some chutney :)

    I made Cauliflower rice with this recipe, it was fast and easy. I have however now adapted the recipe to my families taste. Fry finely cut garlic and onion and fry, add grated cauliflower and sauté. But this recipe is great for very young ones and those of you starting out :)

    My nutritional therapist Jo Scott-Dalgliesh (www.nutritionsolutions4health.co.uk) has a great cauliflower rice recipe - add a red pepper, 2 garlic cloves, 1 small red onion, juice of a lemon, 1 tsp of turmeric, a large cube of fresh ginger chopped or crushed, 3 tbsps almonds, 3 tbsps. cashew nuts and 2 tbsps. raisins. Fry the chopped pepper, onion, garlic & turmeric in 1 tbsp coconut oil for 5 mins, add the uncooked cauliflower rice & cook for a further 5 mins, add the ginger & lemon juice & stir for a minute. Add the nuts & raisins and serve - delicious! Jo also recommends adding chicken, hard boiled eggs or chickpeas instead of nuts.

    Use your leftover cauliflower rice to make dough for pizza. Once rice is cooked squeeze out as much water as you can, add an egg, some grated cheese & some seasoning. Mix to a dough and roll out into a pizza base. Pre bake for 10 minutes then add toppings.

    I have made this and there is no need to add water. 4 minutes in the microwave (covered in pierced film wrap) is perfect. Not yet tried it fried as I am following a diet but would try it with a spray oil to cut down on calories. I have had this served with curry to made a lowcarb meal and it was perfect
